Circe Blanc de Blanc is produced from Chardonnay grown at the Hillcrest Road Vineyard on the Mornington Peninsula, sited on deep red volcanic basalt soils.
This wine is made in limited quantities using the méthode traditionnelle – the traditional French method of producing sparkling wine.
The base wine is bottled with a small amount of sugar and yeast before it is sealed for secondary fermentation. After resting on lees for four years, this sparkling wine is prepared for release.
Pale straw, Circe Blanc de Blanc shows intense purity of fruit balanced by a soft, creamy texture from its lees contact. The finish is long and dry.
